Jean Israel’s Pork Tenderloin

3 T.     Brown sugar

2 T.     Cornstarch

2 c.     Whipping cream

2 T.     Soy sauce

2 T.     Lemon juice

1        Pork tenderloin

·       In a bowl, mix together the brown sugar and cornstarch.

·       Put the brown sugar, cornstarch, and whipping cream in a saucepan, and bring the mixture to a boil.

·       Remove the pan from heat, and then stir in the soy sauce and lemon juice.

·       Place the tenderloin in a baking dish, and then brush it with some of the sauce.

·       Bake at 425 degrees for 10 minutes, and then reduce the heat to 375 degrees and continue baking until the internal temperature of the tenderloin is 150 degrees, approximately 1 hour.

·       While the tenderloin is cooking, brush on more sauce as needed.

·       When the tenderloin is done, remove it from the dish, and let it rest for 5 minutes before carving.

·       Add the pan drippings to the remaining sauce, and heat until warm.  Serve with the tenderloin.
